When I was younger, I used to try and surprise my Dad by already having his coffee made for him in the mornings when we were headed to school. He always used (and still does) two squirts of honey, a splash of cream, and the same travel cup– it was like our thing. At the time I wasn’t allowed to have coffee, so then when I did strike a lifelong love affair with my new morning ritual, we were like two peas in a (coffee bean) pod, and that was BEFORE I introduced him to a caramel macchiato and frappe as a sweet treat. Once that happened, it was game over on regular coffee (we clearly share the same sweet tooth genetics)! Alas, we’ve now upgraded to a little something sweet I like to call Coffee-Mate…
All of that being said, we’re not fancy people when it comes to making morning coffee, but it definitely holds a special place in my heart. Mostly that’s because I’m not a morning person, and the quicker I can have my liquid fuel, the better, but the point is I never go without it, which makes this simple iced caramel macchiato recipe perfect for Summers on the go!
The other morning I walked into Peet’s to get my morning coffee, when something I saw stopped me dead in my tracks. What was it? The wondrous sign announcing the arrival of fall flavors! Despite it being 80 degrees outside, I began picturing pumpkins, cookies, and everything nice about fall. Seriously. Cups of pumpkin and maple lattes began dancing around in my head. Inspired, when I went home that day, I proceeded to make my own Salted Caramel Mocha. Rich, creamy, yet not too sweet, this is the perfect for those crisp winter days.
Ingredients for Mocha (makes 2 servings):
- 2 ounces bittersweet chocolate chips
- 2 cups milk
Salted Caramel (makes about 1 cup, perfect to use for any other dessert topping!
- -6 tablespoons light corn syrup
- -1/2 cup granulated sugar
- -3 tablespoons unsalted butter
- -1/2 cup heavy cream
- -3/4 teaspoon coarse sea salt
In a small saucepan, gently heat the milk and bittersweet chocolate on medium heat until the chocolate is melted. Keep the hot chocolate on low so it stays warm.
In a different saucepan, gently heat the corn syrup until it’s warm. You’ll be able to tell because it’ll slightly bubble. Add in the sugar and let it cook over medium heat without mixing it too much. Just enough so it’s the sugar and corn syrup are incorporated. When it turns amber, remove it from the heat and quickly stir in butter. Add the cream in a steady stream while mixing with the other hand. Add in sea salt. If it seems to solidify, keep mixing or gently reheat on low until it’s liquid again.
Finally, mix in two teaspoons of salted caramel into the mocha, and serve!
Health nuts everywhere will roll over in their graves about this one. Lucky for you, I don’t qualify for such categories. Instead, I have 4 words for you: cupcakes, ice cream, caramel, salt*. Sweet & salty, need I say more?
*I thought five words might be a bit excessive but I would like to note striped straws, too. I’m currently obsessed. I blame BHLDN, they did this to me.
Recipe for Salted Caramel Ice Cream Cake Shots (by yours truly)
- 1 tablespoons caramel sauce, plus a little extra for the glasses
- 4 scoops vanilla ice cream
- 1/4 cup whole milk
- Pinch of sea salt, plus a little extra for the garnish
- 1 vanilla cupcake
- Gold sprinkles
- Whip cream
- Pinch of sea salt
- Caramel sauce
- Shot glasses
Blend ingredients together. Coat the rims of the glasses with caramel, and then dip them in gold sprinkles. Add a dab of caramel to each glass, and then fill with the shake just before serving. Top with whip cream and a pinch of sea salt!
