Hi Willy! You are correct. The true Italian Prosecco’s are extra dry and not too sweet. In the States, there are different levels of sweetness and the spumantes are more common to find (sweet and bubbly). We are glad you found our recipe. Even Elderflower Syrup, which is very common in central Europe, will be just as fine without adding to the alcohol content.
However, I’d like to point out a common misconception: Prosecco (as in the real thing from Italy) is rarely sweet. A good prosecco is extra dry and kicks a** when used for an aperolSPRITZ. Maybe what’s labeled prosecco in the sweet-tooth paradise of the US of A is in reality spumante (which is indeed bubbly sweet).

Anyhow, thanks for the recipe! If I just would know where to get my hands on Elderflower Cordial in my new country of residence :-(5 stars
