Ingredients

For the bourbon salted caramel:

  • 1 cup sugar
  • 1/4 tsp salt
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/2 tsp bourbon

For the boozy float:

  • Bourbon salted caramel
  • 6 hard root beer
  • 1 qt vanilla ice cream
  • 2 cup pretzels
  • Whipped cream

Instructions

How to make the bourbon salted caramel:

  • In a saucepan, combine the sugar, salt, and water over medium heat. Cook until the mixture is a medium amber color, about 7 minutes. Occasionally, brush the sides of the pan with a pastry brush dipped in water to prevent crystals from forming. Then, remove from heat.
  • Stir in heavy cream. Then, add butter and stir until combined. Let the mixture cool to room temperature.
  • Stir in bourbon.

To make the boozy float:

  • Prep 6 glasses. Dip the rim of tall glasses, jars, or mugs in the bourbon salted caramel. Chill the glasses in the freezer.
  • Place 1 cup of the pretzels in a food processor and pulse until just broken down. (Or hammer them in a cloth bag if you don't have a processor).
  • Transfer the broken pretzels to a small plate. Then, remove the glasses from freezer and dip each rim in the broken pretzels.
  • Spread some caramel on the inside of the prepared glasses.
  • Add ice cream.
  • Drizzle with more caramel sauce and broken pretzels.
  • Top with hard root beer, whipped cream, additional caramel sauce, and whole pretzels also dipped in caramel.
