Boozy Caramel Pretzel Root Beer Floats Recipe

For the bourbon salted caramel:
- 1 cup sugar
- 1/4 tsp salt
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1/2 tsp bourbon
For the boozy float:
- Bourbon salted caramel
- 6 hard root beer
- 1 qt vanilla ice cream
- 2 cup pretzels
- Whipped cream
How to make the bourbon salted caramel:
In a saucepan, combine the sugar, salt, and water over medium heat. Cook until the mixture is a medium amber color, about 7 minutes. Occasionally, brush the sides of the pan with a pastry brush dipped in water to prevent crystals from forming. Then, remove from heat.
Stir in heavy cream. Then, add butter and stir until combined. Let the mixture cool to room temperature.
Stir in bourbon.
To make the boozy float:
Prep 6 glasses. Dip the rim of tall glasses, jars, or mugs in the bourbon salted caramel. Chill the glasses in the freezer.
Place 1 cup of the pretzels in a food processor and pulse until just broken down. (Or hammer them in a cloth bag if you don't have a processor).
Transfer the broken pretzels to a small plate. Then, remove the glasses from freezer and dip each rim in the broken pretzels.
Spread some caramel on the inside of the prepared glasses.
Add ice cream.
Drizzle with more caramel sauce and broken pretzels.
Top with hard root beer, whipped cream, additional caramel sauce, and whole pretzels also dipped in caramel.
