Healthy Super Donut Copycat Recipe

The cafeteria favorite gets a healthy baked makeover with this Super Donut copycat recipe.

Equipment

Ingredients

  • 3 tbsp coconut, avocado, or canola oil
  • 1/3 cup light agave, honey, or granulated sugar (See notes if using sugar)
  • 1 egg yolk
  • 1/4 cup milk
  • 1 tbsp vanilla extract
  • 1/4 tbsp baking soda
  • 1/4 tbsp baking powder
  • 1/4 tbsp salt
  • 1 cup all-purpose flour
  • 2 tbsp all-purpose flour
  • 1 tbsp light agave
  • 2 tbsp water

Instructions

  • Preheat the oven to 350°F and oil a baking donut pan with 6 donut cavities.
  • In a medium-sized mixing bowl, beat the oil, sweetener of your choice, egg yolk, milk, and vanilla extract together until it's combined. Mix by hand with a whisk or with a hand mixer.
  • In a separate mixing bowl, whisk the flour, baking soda and powder, and salt together until combined. Add it to the wet ingredients and mix until thoroughly combined.
  • Place the donut batter in a piping bag or zippered bag and cut the corner off. Pipe the batter into the 6 cavities in the donut pan. They shouldn’t be full to allow the batter to rise while baking.
  • Bake the donuts for 10-12 minutes, or until they are golden brown around the edges and a toothpick inserted in the center comes out clean.
  • In a small saucepan, combine the tablespoon of light agave or honey and 2 teaspoon of water. Heat it over medium-low heat, stirring occasionally, until they are thoroughly combined in a syrup.
  • Turn the donuts out onto a cooling rack. Brush both sides with the syrup while still warm. Allow the donuts to cool.

Notes

  • You can make these gluten-free by substituting any gluten-free cup-for-cup flour blend.
  • If you would like to use granulated sugar (white or organic), add an extra tablespoon of oil to compensate for not using a liquid sweetener like agave or honey.
  • This recipe can easily be doubled to give you a dozen donuts.
  • Don’t skip oiling your donut pan, even if it’s a non-stick surface. The batter is fairly moist and can still stick to the donut pan cavities.
  • Store in an airtight bag or container. Keep them at room temperature for up to 4 days.
  • You can reheat them in the microwave for 8-10 seconds, or until warm, to get that reheated Super Donut experience!
