Ingredients

For the strawberry acai simple syrup

  • cup freeze-dried strawberries
  • 2 cup water
  • cup sugar
  • 1 tsp green coffee bean extract powder
  • ½ tbsp acai powder

For the Pink Drink:

  • 1 cup white grape juice
  • 2 cup water
  • 4 cup coconut milk
  • Ice

Instructions

To make the strawberry acai simple syrup:

  • Place 1 1/2 cups of freeze-dried strawberries, 1 1⁄2 cups of sugar, 2 cups of water, 1 teaspoon of green coffee bean extract powder, and 1⁄2 tablespoon of acai powder into a saucepan.
  • Bring the mixture to a boil, stirring occasionally. After it’s at a full boil, reduce the heat to medium-low and let it simmer for 10 minutes.
  • Pour the syrup through a fine mesh sieve set over a bowl to strain out the strawberry pieces. Let the syrup cool completely in the refrigerator.

To make the Pink Drink:

  • In a large pitcher, combine all of the strawberry acai simple syrup, 2 cups of water, 1 cup of white grape juice, and 4 cups of coconut milk.
  • Stir the pink drink until it’s well combined.
  • Serve it in glasses over ice with 3-4 added freeze-dried slices of strawberries.

Notes

  • Store the pink drink in the refrigerator in a covered container. Some separation will happen with the coconut milk. Simply stir it back together and pour over ice.
  • It will keep in a covered pitcher or jar for up to a week.
