— For the Sauce —
- 1 tbsp olive oil
- 2 tbsp minced garlic
- 2.5 cup whole milk
- 0.75 cup grated parmesan cheese
- 4.5 tbsp corn starch
- 1 tsp kosher salt
- 0.25 tsp black pepper
- 1 cup cannellini beans drained and rinsed
— For the Pasta —
- 8 oz fettuccine pasta
- 1 cup yellow carrot ribbons
- 1 cup cannellini beans drained and rinsed
- 2 cup baby spinach
— For Garnishing —
- 2 oz shaved parmesan cheese
- 2 tbsp chopped parsley
— For the Sauce —
Heat oil in medium sauce pan over low heat.
Add minced garlic, cook and stir constantly allowing the garlic to brown for about 4 minutes.
Puree white beans in food processor or blender, then add milk and white bean puree to pan.
Bring to a boil, then turn to simmer 3 to 4 minutes
Add parmesan cheese, salt, and black pepper, cook for 1 minute, and set aside.
— For the Pasta —
Bring 4 quarts of water to a rapid boil, adding salt if desired.
Add 8 oz. of fettuccine, then cook 9 minutes.
Add yellow carrots with 3 minutes left to cook on pasta.
Add white beans with 1:30 left to cook on pasta.
Add the spinach with 15 seconds left to cook on pasta, then drain and toss everything with the sauce.
