Pistachio Strawberry Crumble Recipe

Equipment

  • Pie pan or 8”x8" baking dish

Ingredients

  • 3 cup chopped strawberries
  • 1 tbsp water
  • 3 tbsp butter or coconut oil
  • 1/8 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/3 cup chopped pistachios
  • 1/3 cup whole rolled oats

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease the pan.
  • In the bowl of a food processor, pulse the oats, pistachios, flour, brown sugar, cinnamon and salt until just combined.
  • Add the butter (or oil) and pulse again. Add the water and pulse again. The mixture should be fairly crumbly and stick together when pressed.
  • Place the strawberries in the bottom of the baking dish and top with crumble. Bake for 20 minutes or until the fruit is bubbly and the topping is lightly browned.
  • Remove from oven and let cool for 10 minutes before serving.
