Equipment

Ingredients

  • 1 lb ground turkey meat
  • 4 tbsp olive oil divided
  • 1 1/2-2 tbsp salt
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 medium white or yellow onion roughly diced
  • 1 bell pepper chopped into 1/2” pieces
  • 1 cup corn frozen, canned, or fresh
  • 1 tbsp fresh garlic 2-3 cloves minced or 1 1/2 tsp. garlic powder
  • 15 oz tomato sauce
  • 14.5 oz petite diced tomatoes canned or fresh
  • 7 oz diced green chilis canned or fresh
  • 30 oz kidney beans dark or light

Instructions

Stovetop Directions --

  • In a large pot, heat half of the olive oil over medium-high heat until it is simmering and runs quickly across the bottom of the pan.
  • Add the ground turkey and cook for 10 minutes, stirring and chopping it with a wooden or metal spoon, until it is cooked through. Remove from pot and strain off any excess fat.
  • Set the pot back on the stove, and heat the rest of the olive oil over medium heat. Once it is hot, add the onion, pepper, and corn to the pot. Saute it for about five minutes, or until the onions are beginning to soften and look translucent.
  • Push the veggies to one side, then add the minced garlic on the bottom of the pot and cook until fragrant, 1 to 2 minutes.
  • Add the turkey back in with the vegetables and stir together with the spices and salt. Add in the remaining ingredients and stir together. Allow it to all heat up, then reduce the heat to low and bring the turkey chili to a gentle simmer.
  • Cook for 3-4 hours, stirring occasionally. Before serving, taste the chili to see if you wish to make add any salt.
  • Serve with toppings of your choice.

Instant Pot Directions --

  • Chop all of the vegetables, mix together the spices, and open all of the cans to have everything ready as you need it.
  • Turn the Instant Pot on to the saute setting and heat half of the olive oil. Add the ground turkey and cook for 8-10 minutes, stirring and chopping it with a wooden or metal spoon, until it is cooked through. Remove from pot and strain off any excess fat.
  • Heat the remaining olive oil on the saute setting and add the onion, pepper, and corn to the pot. Saute it for about five minutes, or until the onions are beginning to soften and look transluscent.
  • Push the veggies to one side, then add the minced garlic on the bottom of the pot and cook until frangrant, 1 to 2 minutes.
  • Add the turkey back in with the vegetables and stir together with the spices and salt. Add in the remaining ingredients and stir together.
  • Place the lid on the Instant Pot, making sure that the valve is set to sealing. Turn on the pressure cook setting on high and set the timer for 15 minutes.
  • When the cooking time is over, you can either vent the steam valve manually or allow it to release naturally. Before serving, taste the chili to see if you wish to make add any salt.
  • Serve with toppings of your choice.

Slow Cooker Directions --

  • In a large pot, heat half of the olive oil over medium-high heat until it is shimmering and runs quickly across the bottom of the pan.
Stir in the seasonings.
  • Add all of the meat and veggies to a large slow cooker, then add in the rest of the ingredients.
  • Cook it on low for 4-6 hours, or high for 3-4 hours. Before serving, taste the chili to see if you wish to make add any pepper and salt.
  • Serve with toppings of your choice.
