Fresh fruitof your choice (blueberries, strawberries, kiwi, raspberries, etc.)

Instructions
For the sugar cookie crust: Bake the cookies in the preheated oven on a baking sheet with parchment paper until the edges turn lightly golden. And let it cool completely, otherw ise the cheese topping will melt and curdle.
For the fruit pizza frosting: Mix the mascarpone cheese, confectioners sugar, and vanilla together in a bowl. Beat until fluffy. Then, spread a generous dollop of the cream cheese frosting on top of each cookie.
Rinse and slice your fruits as necessary.
Add and arrange your toppings any way that you would like.
Give the fruit a quick squeeze of lemon juice on top to keep them from turning brown before serving.
