Ingredients

  • 2 cup

    rolled oats

  • 1 cup

    chopped walnuts

  • 1 tsp

    ground cinnamon

  • 1/2 tsp

    ground nutmeg

  • 1/4 tsp

    ground cloves

  • 2 tbsp brown sugar
  • 2 tbsp flour
  • 1/3 cup honey
  • 1/4 cup canola oil
  • 4 cored apples
  • 2 tbsp unsalted butter
  • 1 tbsp honey and more for drizzling as a garnish
  • 1/4 tsp ground cinnamon
  • 2 cup low fat yogurt

Instructions

For the homemade granola -

  • Preheat oven to 325 degrees F. Combine the rolled oats, walnuts, cinnamon, nutmeg, cloves, a pinch of salt and brown sugar in a bowl. Make a well in the center, then add in the honey and canola oil. Stir to combine until oats are completely wet and no dry clumps remain.
  • Spread on a baking sheet (preferably lined with non-stick parchment paper) and bake for 15 minutes.
  • Remove from oven, stir once, then cook another 5-10 minutes until golden brown. Remove from oven and let cool completely before touching. The cooling process is what allows clumps to form! Granola will keep in an air-tight container for up to two weeks.

For the stuffed apples -

  • Prepare the apples. Preheat oven to 375 degrees F. Place apples, cut side up in a baking dish with sides so the apples don’t fall. Dot apples with butter, then drizzle with honey and sprinkle with cinnamon.
  • Pour ¼ cup water into the bottom of the baking dish and cover with foil. Bake until apples are soft, about 35-40 minutes. Uncover and remove from oven, then stuff with prepared spiced granola.
  • Bake, uncovered, another 10 minutes to allow granola to be warmed through. Remove from oven and allow to cool at least 5 minutes before placing apples in a bowl. Spoon ½ cup yogurt over each apple, then top with more honey and granola.
