Instructions
Start of by making the mini tart shells. Use a round cookie cutter to cut out discs in the pie crust. Then, line your tart pans with the pie crust. Bake according to your pie crust directions.
While the pie crust is cooling, mix together the mascarpone, honey, vanilla extract, and lemon zest to make the filling.
Fill the mini tart shells with the cheese filling.
Top off with whole cherries.
