Ingredients
For the pork loin:
1seasoned pork loin roast
1cupbone broth
1tbspolive oil
For the maple orange glaze:
1cuporange juice
1cupdark maple syrup
1tbspDijon mustard
1/3cupcold water
1tbspcornstarch
2tbspbrown sugar
Instructions
Take the pork loin out of the refrigerator to sit for about 20 minutes. This will allow it to come to room temperature before cooking.
Set the Instant Pot to the Sauté setting. Once it displays “Hot”, pour in a layer of olive oil.
Add the pork loin in the Instant Pot and sear both sides for approximately 3-5 minutes each or until browned. Remove the pork loin from the Instant Pot and set it aside on large plate or cutting board.
Turn the Sauté setting off, and switch the setting to Meat/Stew or Pressure Cook setting.
Insert the metal roasting rack and add 1 cup of bone broth to the Instant Pot. Be sure to deglaze your Instant Pot pan by scrapping any seared brown bits on the bottom of the pot.
Once the Meat/Stew temperature is ready, place your pork loin on the roasting rack. Twist and lock the lid of the Instant Pot.
Let it cook for approximately 17-20 minutes. We cooked ours for 17 minutes to achieve a medium rare pork loin.
When the cook cycle is finished, allow for a 12 minute natural release. Then, quick release any remaining pressure. Remove the lid.
Using a meat thermometer, check the pork loin for an internal temperature of 145˚F degrees. If it has not reached 145˚F degrees, place the lid back on the Instant Pot. Allow for the remaining heat to cook the pork and recheck the temperature after 2-3 minutes.
Remove the pork loin from the Instant Pot and place it on a cutting board or plate, and let it sit for about 15 minutes. This rest period is important to ensure that the juices are sealed in.
To make the maple orange glaze:
Make the glaze while the pork loin is cooking or while it is resting.In a stove top pan on medium heat, combine the orange juice, brown sugar, and dijon mustard.
In a separate bowl, whisk the water and cornstarch until it has fully dissolved. Then, add it into the orange juice mixture on the stove. Let the mix come to a boil, and then stir for another two minutes.
Cut away the pork loin netting and place the pork loin on a serving platter and pour the glaze over top.
