Ingredients

  • 4 pcs pound cake
  • 3 tbsp sweetened butter melted
  • 1/2 cup mascarpone cheese
  • 3 tbsp confectioner’s sugar
  • 1/2 cup fruit preserves or jam or jelly
  • 1/2 cup blueberries or other fruit toppings of your choice

Instructions

  • Preheat the grill on medium high heat.
  • Slice the pound cake into 1 1/2-inch thick pieces, and lightly brush them with the sweetened melted butter.
  • On a cast iron skillet, grill the pound cake slices uncovered for about 1-2 minutes on each side or just until they're a warm brown color.
  • In a mixing bowl, combine and stir the 3/4 cup of confectioner's sugar with the mascarpone cheese. You can add more or less depending on how sweet you'd like it to be.
  • Spread the cheese on the grilled poundcake slices. Top with a small scoop of fruit preserves and berries. And serve immediately.
