- 4 pcs pound cake
- 3 tbsp sweetened butter melted
- 1/2 cup mascarpone cheese
- 3 tbsp confectioner’s sugar
- 1/2 cup fruit preserves or jam or jelly
- 1/2 cup blueberries or other fruit toppings of your choice
Preheat the grill on medium high heat.
Slice the pound cake into 1 1/2-inch thick pieces, and lightly brush them with the sweetened melted butter.
On a cast iron skillet, grill the pound cake slices uncovered for about 1-2 minutes on each side or just until they're a warm brown color.
In a mixing bowl, combine and stir the 3/4 cup of confectioner's sugar with the mascarpone cheese. You can add more or less depending on how sweet you'd like it to be.
Spread the cheese on the grilled poundcake slices. Top with a small scoop of fruit preserves and berries. And serve immediately.
