Heat sugar and water in a sauce pan over medium heat until sugar melts. Add the lavender, rose, or passion fruit pulp. Let cool and steep for a few hours.
Strain through fine mesh strainer. Store in a sealed container in the fridge for a few weeks.
Make the syrup of your choice. Add all the liquid ingredients into a shaker with ice. Shake and strain into a coupe glass. Garnish with macaron.
