Ingredients

  • 1 ¾ oz bourbon
  • 1 ¼ oz heavy cream
  • vanilla bean split and scraped out
  • 1 oz orgeat syrup
  • 1 oz soda water
  • 1 large egg white
  • 1 lemon peel express and discarded
  • Sprinkles for garnish

Instructions

  • Add the bourbon, cream, orgeat syrup, egg white, and vanilla bean to a cocktail shaker without ice.
  • Dry shake (no ice) vigorously for 1-3 minutes to create a thick, meringue-like foam that rises above the rim of the glass.
  • After the dry shake, add ice and shake until well-chilled. Strain into a chilled glass
  • Gently top with soda water to let the foam rise.
  • Sprinkle rainbow sprinkles over the foam.
