For the cupcakes:
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- ½ cup milk or buttermilk
- ¼ cup hot chocolate mix
- ¼ cup cocoa powder
- ¼ cup vegetable oil or melted butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg
For the hot chocolate frosting:
- 16 oz powdered sugar
- ⅓ cup prepared hot chocolate
- ⅓ cup unsalted butter softened
- Marshmallows optional for garnishing
To make the cupcakes:
Preheat your oven to 350°F (175°C). Line a cupcake pan with liners.
In a large bowl, whisk together flour, cocoa powder, hot chocolate mix, baking powder, baking soda, and salt until fully combined.
In a separate bowl, beat together sugar, eggs, milk, oil (or butter), and vanilla until smooth.
Slowly add dry ingredients to wet ingredients and mix until you get a smooth batter without lumps.
Fill liners about 2/3 full and bake 17-20 minutes, or until a toothpick comes out clean. Let cool completely before frosting.
To make the frosting:
Add the softened butter to a mixing bowl and beat with a hand mixer or stand mixer until smooth.
Slowly mix in the powdered sugar and beat until creamy and well combined. (Scrape down the sides as needed.)
Pour in the hot chocolate and mix again until the frosting is light and fluffy.
