Peppermint Hot Chocolate Affogato Recipe

- 16 oz white hot chocolate prepared beforehand
- 4 oz espresso optional
- 1 1/2 tsp peppermint extract to taste
- 1 qt vanilla ice cream
- 3 drop red food coloring
- 4 candy cane optional for garnish
In a saucepan over medium heat, combine the prepared hot chocolate and espresso (if using).
Stir in 3-4 drops of red food coloring for a festive hue. Then, add 1 1/2 to 2 teaspoons of peppermint extract, adjusting to taste.
Scoop 2 small scoops of vanilla ice cream into each of 4 clear glasses.
Pour about half a cup of the warm peppermint hot chocolate over the ice cream in each glass
Garnish each affogato with a candy cane and serve immediately.
