Creative Popsicle Party Ideas & Pineapple Coconut Popsicles Recipe

With back to school season upon us and fall weather just around the corner, there is only one logical thing left to do. And that is to throw one last, giant summer hurrah before the daily grind sets back in!

To get the party started, you need a good showstopper popsicle recipe.
Before we get to that though, let’s all recite together the importance of time sensitivity when it comes to a popsicle party. Be sure to serve all of the items immediately once removed from the freezer.
And the best way that we’ve found to do that is to have them already plated in the freezer so when you remove them you’re all set for photo-ops and the little details.
Creamy Pineapple Coconut Popsicles Recipe
Ingredients:
Chopped fresh pineapple
Fresh pineapples juice
Coconut cream
Truvia® Natural Sweetener — The rule of thumb is one packet of Truvia® Natural Sweetener provides the same sweetness as two teaspoons of sugar.
Vanilla extract
Coconut flakes
How to make pineapple coconut popsicles:
Mix the coconut cream, 1 tablespoon (or 2 packets) of Truvia® Natural Sweetener, the coconut flakes, and vanilla in a bowl until well combined. Blend the fresh pineapple and pineapple juice with the remaining tablespoon of natural sweetener until you’ve got a smooth puree.
Next, you can blend the two mixture for a quick and simple popsicle, or you can add a layer at a time, freezing in between to create the white and yellow layers like we did!
Creative Popsicle Party Ideas
1 — Get fancy with your popsicle sticks.
Instead of the regular wooden popsicle sticks, opt for plastic cocktail stirrers, striped popsicle sticks, colored popsicle sticks… or basically anything else you can dream up!
We actually repurposed plastic cocktail stirrers for ours. Then, we cut them to different lengths with heavy duty shears, to suit the popsicle stands so that they’re not top heavy.
2 — Display your popsicles in a DIY acrylic popsicle stand.
These acrylic stands are SUPER easy to make. To make these, you’ll simply need an acrylic riser set and drill and corresponding drill bit (sized to whatever popsicle stick you need to fit).
But be sure to note that if you’re using a large popsicle stick, you’ll have to drill a small hole first. And then, use progressively larger drill bits until the hole is the size you need.
Otherwise if you just try to drill one large hole on the first go, it will crack the acrylic.
You can even insert the popsicles into the stand while in the freezer so that they’re ready to serve to guests right as you take them from the fridge!
3 — Serve cocktails out of frozen popsicle cocktail cups.
You can make any flavor popsicle glass you’d like. However, we stuck with the pineapple and coconut stripe theme and layered each ingredient for the recipe into a shot glass mold as we did with the regular popsicle mold.
Then, we served them with a mini rendition of the gin fizz float over crushed ice.
4 — Make popsicle bon bons.
Materials:
- Round mini ice trays
- Gel food coloring
- Yogurt chips
- Your favorite popsicle recipe
You can use the same popsicle recipe as before, but instead make them layered in mini round ice trays. The ones we used (linked above) are perfect because they have a rubber bottom to make the “bon bons” easy to pop out!
Once you’ve made the bites, melt the yogurt chips and stir in a bit of your favorite gel coloring to dip the bon bons in quickly. Then dip them in sprinkles and place back in the freezer until ready to serve.
All in all you can’t really go wrong with a popsicle party, but these should definitely get you off to a good start! Do you all have a favorite reduced-sugar popsicle recipe? I think I’m still stuck on the yogurt dipped popsicle bon bons, but maybe I’m just bias.
Pineapple Coconut Popsicles Recipe

- Popsicle mold
- Large mixing bowl
- Mixer
Ingredients
- 3 cups chopped fresh pineapple
- 1/4 cup coconut cream
- 1/4 cup pineapple juice
- 2 1/2 tbsp Truvia® Natural Sweetener
- 1 tsp vanilla extract
- Coconut flakes

- Mix the coconut cream, 1 tablespoon (or 2 packets) of Truvia® Natural Sweetener, the coconut flakes, and vanilla in a bowl until well combined.
- Blend the fresh pineapple and pineapple juice with the remaining natural sweetener until you’ve got a smooth puree.
- Next, you can blend the two mixture for a quick and simple popsicle. Or you can add a layer at a time, freezing in between to create the white and yellow layers like we did!
- Pour the popsicle mixture into your popsicle molds. Freeze until solid, 6-8 hours or ideally overnight.
