Well friends, today is a great day! Not only are we teaching you how to whip up this cucumber mint cooler recipe, but we’re also teaching a free DIY event at our studio in Houston, TX with Skinnygirl® Cocktails on September 3rd! For those of you that aren’t in Houston to be able to enjoy the cocktail action with us, we’ve got an equally awesome Summer sipper for you to enjoy with this cucumber cooler. Don’t worry, I’ll be sharing all of the details after the event for you to be able to create your own shindig right at home…
INGREDIENTS (yields one cocktail):
- 1 part Skinnygirl® Cucumber Vodka
- 3 slices of cucumber (plus a few for garnishing)
- 10 mint leaves (plus a sprig for garnishing)
- 1 tsp. of Stevia
- 1 ounce of fresh lime juice
- Tonic water
Muddle the cucumber slices and mint leaves with the lime juice, then add ice, vodka, and stevia (you can use less or more Stevia to your sweetness standards!) to the mixture and shake well. Strain over ice and fill the rest of the glass with tonic water, then garnish with a mint sprig and cucumber slice.
