Ingredients

  • 4 brioche toast slices
  • 1 tomato cored, seeded and diced
  • 2 tbsp white truffle oil or extra virgin olive oil or balsamic vinegar
  • 1 avocado diced
  • 2 tbsp crumbled or shredded cheese of your choice
  • 3 tbsp bruschetta sauce

Instructions

  • Optional: In medium skillet with oil over medium heat, warm the diced tomatoes. This is optional but a quick step that will release the aromatic flavors of the tomatoes.
  • Drizzle a bit of white truffle oil on each slice.
  • Spoon tomatoes on top.
  • Sprinkle on the diced avocado, cheese and top with bruschetta sauce.

Notes

If making a large batch, combine the diced tomatoes, diced avocado, cheese and bruschetta sauce in a bowl and top the toast together.
