- 2 oz carrot juice
- 1 3/4 oz vodka
- 3/4 oz lemon juice
- 3/4 oz simple syrup
- 1 in ginger peeled and sliced into quarter-sized pieces
- 1 egg white
- Mini rainbow carrots optional for garnish
- Edible flowers optional for garnish
In a cocktail shaker, add the sliced ginger. Muddle the ginger to release its flavors. If you prefer a stronger ginger kick, muddle a bit more.
To the shaker (without ice), add the carrot juice, vodka, lemon juice, simple syrup and egg white. Dry shake vigorously for about 30 seconds.
Add ice to the shaker and shake again for another 15-20 seconds. This chills the cocktail and further incorporates the flavors.
Strain the cocktail into a chilled glass using a fine mesh strainer to ensure a smooth texture. Discard any small ginger or ice particles.
Optional: Garnish with mini-carrots and/or edible flowers.
