For the oatmeal bowl:
- 2 cup spinach leaves
- ¾ cup water
- ½ cup cherry tomatoes halved
- ¼ cup steel cut oats
- 2 tbsp grated parmesan cheese
- 1 tsp olive oil
- 1 pinch salt
- 1 large egg
- 1 garlic clove minced
For the tahini sauce:
- ½ cup tahini paste
- ½ cup fresh parsley leaves
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- 1 scallion
- 2 garlic clove
To make the tahini sauce:
In a blender or food processor, combine tahini, parsley, lemon juice, olive oil, scallion, and garlic. Blend until smooth and creamy. Add 1–2 tablespoons of water if needed.
To make the oatmeal bowl:
In a small saucepan, whisk together oats, water, and salt. Bring to a boil, then reduce heat and simmer for 25–30 minutes until tender. Stir in Parmesan cheese and adjust seasoning to taste.
While oats cook, heat olive oil in a skillet over medium heat. Add minced garlic and spinach. Cook for 3–4 minutes until wilted. Set aside with halved cherry tomatoes.
Bring 2–3 cups of water to a simmer in a small saucepan. Crack the egg into a small dish and gently slide it into the water. Poach for about 3 minutes, until the yolk is just set. Remove with a slotted spoon.
Assemble the bowl! Spoon oatmeal into a bowl. Top with sautéed spinach, cherry tomatoes, and the poached egg. Drizzle generously with the herbed tahini sauce.
