1 1/4cupflour
1/2cupwhite granulated sugar
1/2cupbutter melted and cooled
1/4cupbrown sugar
1/4tspground cinnamon
1/4tspground cardamom
1tspvanilla
2tspcornstarch
1/4tspsalt
Instructions
Preheat the oven to 350 degrees F.
In a large bowl, toss together the peaches, brown sugar, cinnamon, cardamom, vanilla and cornstarch.
Heat a greased cast-iron skillet (or any oven-safe skillet) over medium heat.
Add the peach mixture and cook for 5-7 minutes, until peaches start to break down and become soft.
While the peaches are cooking, stir together the flour, sugar, salt and melted butter to form a quick dough.
Dollop the dough on top of the cooked peaches and place the skillet in the oven for 35-40 minutes, until golden brown and bubbly.
Remove from oven, let cool slightly and serve with vanilla ice cream, if desired.
Notes
Make sure you are choosing juicy ripe peaches. Two medium peaches yield one cup. If your peaches aren’t quite ready, throw the unripe peaches in a paper bag for 24-48 hours.
