For the bourbon maple syrup:
- 1 cup maple syrup
- ½ cup bourbon
- 2 tbsp orange juice
- 1 tsp vanilla
For the apple compote:
- 2 large apple or 3 small apples, thinly sliced
- ½ lemon juiced
- 2 tbsp maple syrup
- 2 tbsp butter
- 1 ½ tsp cinnamon
- ⅛ tsp nutmeg
- 1 pinch salt
For the spiced cinnamon waffles:
- 2 cup all-purpose flour
- 2 cup buttermilk
- ¼ cup unsalted butter melted and cooled
- 2 egg separated
- 2 tbsp brown sugar
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp ginger
- ¾ tsp salt
- ½ tsp allspice
- ¼ tsp cardamom
- ¼ tsp ground cloves
- ¼ tsp nutmeg
To make the bourbon maple syrup:
In a small saucepan over medium-high heat, combine maple syrup, bourbon, vanilla, and orange juice. Bring to a boil and let it cook for about 10 minutes, stirring occasionally, until slightly reduced and thickened. Remove from heat and let cool.
To make the apple compote:
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the apples, cinnamon, nutmeg, lemon juice, maple syrup, and salt. Stir to coat the apples evenly. Then, cook for 5–6 minutes, until the apples are soft and the sauce bubbles. Remove from heat and set aside.
Prepare the waffle batter:
In a large bowl, whisk together all dry ingredients: flour, sugar, spices, baking powder, baking soda, and salt.
In a separate bowl (or stand mixer), beat the egg whites until stiff peaks form.
In another bowl, whisk together egg yolks, melted butter, vanilla, and buttermilk until smooth.
Pour the wet mixture into the dry ingredients and stir gently. Don’t overmix.
Fold the beaten egg whites into the batter until mostly incorporated. The batter should be light and airy.
