For the persimmon syrup:

  • 2 persimmon ripe, peel and chopped
  • 1 cup brown sugar
  • 1 cup water

For the spiced pumpkin punch:

  • 1 ½ oz rum
  • 1 oz orange juice
  • 1 oz apple juice
  • ¾ oz persimmon syrup directions below
  • ½ oz Allspice Dram
  • ½ oz fresh lemon juice
  • ¼ oz pumpkin purée
  • 1 dash cinnamon to garnish
  • 1 pinch nutmeg to garnish
  • 1 cinnamon stick optional to garnish

Instructions

To make the persimmon syrup:

  • In a small saucepan, add the chopped persimmons, sugar, and water.
  • Bring to a gentle boil, then reduce heat and let simmer for 10–15 minutes. Stir occasionally to help the fruit break down. Gently mash the persimmons with the back of a spoon to release more flavor.
  • Pour the mixture through a fine mesh sieve into a heatproof container, pressing lightly to extract the liquid. Let cool completely.

To make the spiced pumpkin punch:

  • In a cocktail shaker with ice, combine rum, Allspice Dram, orange juice, apple juice, lemon juice, persimmon syrup, and pumpkin purée.
  • Shake vigorously for 15–20 seconds until well chilled.
  • Double strain the punch into a glass with ice.
  • Dash some cinnamon and a pinch of nutmeg on top to finish. Or garnish with a cinnamon stick for extra flair.
