For the persimmon syrup:
- 2 persimmon ripe, peel and chopped
- 1 cup brown sugar
- 1 cup water
For the spiced pumpkin punch:
- 1 ½ oz rum
- 1 oz orange juice
- 1 oz apple juice
- ¾ oz persimmon syrup directions below
- ½ oz Allspice Dram
- ½ oz fresh lemon juice
- ¼ oz pumpkin purée
- 1 dash cinnamon to garnish
- 1 pinch nutmeg to garnish
- 1 cinnamon stick optional to garnish
To make the persimmon syrup:
In a small saucepan, add the chopped persimmons, sugar, and water.
Bring to a gentle boil, then reduce heat and let simmer for 10–15 minutes. Stir occasionally to help the fruit break down. Gently mash the persimmons with the back of a spoon to release more flavor.
Pour the mixture through a fine mesh sieve into a heatproof container, pressing lightly to extract the liquid. Let cool completely.
To make the spiced pumpkin punch:
In a cocktail shaker with ice, combine rum, Allspice Dram, orange juice, apple juice, lemon juice, persimmon syrup, and pumpkin purée.
Shake vigorously for 15–20 seconds until well chilled.
Double strain the punch into a glass with ice.
Dash some cinnamon and a pinch of nutmeg on top to finish. Or garnish with a cinnamon stick for extra flair.
