It might seem odd to have an ice cream float in the middle of winter.

But trust me, this Boozy Orange Pomegranate Float works!

I, Ashley, dreamed of pomegranate floats this past summer.

But because I only like to use fresh pomegranate juice for my drinks, I had to wait until the pom season rolled around, which is now in full swing thankfully! 

For an extra dose of pomegranate flavor and antioxidants, I mixed in pomegranate seeds into the ice cream.

Now, I love to make homemade ice cream.

But this time of year my KitchenAid is tied up making macarons and cookies!

Instead, I just used a good quality, store bought ice cream and called it a day. 

Oh, and did I mention the float has booze in it?!

Despite getting lots of use in the summer, gin reminds me of winter tipples.

I know many people who describe gin as like “drinking Christmas trees” and for good reason.

Juniper berries come from juniper tress that are often decked out in glittery ornaments this time of year.

All gin must be made with these juniper berries to be considered gin.

So use this as an excuse to sip on gin cocktails in the name of winter spirit!

Pomegranate Syrup Ingredients

To recipe calls for pomegranate syrup, which you can easily make at home.

You’ll need the following ingredients:

  • 2 cups fresh pomegranate juice
  • 1 1/2 cups sugar
  • 1/2 oz orange juice

How to Make Pomegranate Syrup

Place 2 cups of freshly juiced pomegranate juice to a saucepan.

Add in the orange juice.

Pour the sugar into the pan, stir and turn the stove to high.

Bring to a boil and turn to medium to simmer for 5-10 mins to reduce a little.

Let cool in the fridge before using.

Ingredients Needed to Make a Boozy Orange Pomegranate Float

  • 1 1/2 oz gin
  • 3/4 oz orange liqueur (such as Cointreau or triple sec)
  • 2 1/2 oz pomegranate syrup (recipe below)
  • 4 oz soda water
  • orange bitters
  • 2 scoops (1 cup) of your favorite vanilla ice cream (store bought or homemade)
  • Pomegranate seeds

How to Make a Boozy Orange Pomegranate Float

Start my softening your ice cream (I do 1 oz of seeds per cup of ice cream).

Fold in the pomegranate seeds, being careful not to over mix.

Place this back in the freezer until completely frozen.

Mix gin, orange liqueur, bitter, and pomegranate syrup in a shaker with ice.

Strain into a glass.

Top with the soda water.

Add in two scoops of the pomegranate seed ice cream.

  1. There is nothing wrong with having a little ice cream dead smack in the winter. . .especially when booze is involved. I’m a pomegranate fanatic of sorts so I am thinking I might text the Mr. STAT and tell him to pick up some gin on the way home tonight. . .because we both really need these beauties in our life.
