Tailgate-Ready Pineapple Beertails Recipe

  • 1.5 cup gin or vodka
  • 1 cup pineapple juice
  • 0.75 cup fresh squeezed lime juice
  • 0.75 cup simple syrup
  • 0.25 tsp salt
  • IPA beer to top


  • Combine all but the IPA in a sealable bottle or container (it needs to have a capacity of 32 oz or 4 cups). Throw it in a cooler with the rest of your tailgate/picnic/barbecue beers and drinks. Make sure you throw at least one bottle of IPA in there!
  • When you're ready to serve, line up 8 plastic cups and fill with plenty of ice. Shake your bottle and pour out the mixture into the ice-filled cups, dividing evenly (you want about 1/2 cup in each glass). 
  • Crack open an IPA and top off each drink to taste (I like about 2 oz but measuring at a tailgate is really just not gonna happen. Eyeball it! You'll be fine!). Garnish with mint and edible flowers if you're feeling fancy -- easy to transport in a plastic baggie.
