There’s nothing like an awful fight with the flu to make a girl realize how glorious food really is. Now I, Nanette am back to full health and making up for lost time in many delicious ways.
One thing I really missed eating? Fresh, juicy fruit especially during the heart of summer. This cherry mascarpone fruit tart was the first thing I made after my recovery. And I absolutely adore it.
The creamy cheese taste just like ice cream, and the cherry… well, it’s literally the cherry on top!
Ingredients Needed To Make Mini Cherry Tarts
- Frozen pie crust
- Mascarpone cheese
- Honey
- Vanilla extract
- Lemon — You’ll need just the zest.
- Fresh cherries — For the toppings
How To Make Mini Cherry Tarts
First, we’re going to start of by making the mini tart shells. Use a round cookie cutter to cut out discs in the pie crust, then line your mini tart pan with the pie crust. Bake according to your pie crust directions.
While the pie crust is cooling, mix together the mascarpone, honey, vanilla extract, and lemon zest. Try your best not to eat the cheese filling while mixing (I failed at this…). Fill the mini tart shells with the cheese filling, then top off with whole cherries.
