If we’re out for dinner or a date night, I’m all about the fancy schmancy cocktails that you want to take photos of and sip lightly. When it comes to making cocktails at home though, the easier it is to make a yummy cocktail on the fly, the better. I’m much more the type to get caught up in socializing than I am to be making a fancy drink. Which type are you?!
Whichever category you fall in, I like to think that these 3 sparkling ice cream cocktail recipes still apply. You only need 3 ingredients, they’re super quick to put together, and they are SO delicious. I’m talking lick the rim of the glass delicious! Plus this recipe is just as good as mocktail, too.
Needless to say, the real star of these is Häagen-Dazs Vanilla ice cream, but who can compete with that?!…
Another thing to note: you can make these as custom as you’d like when it comes to flavor profiles. You can’t go wrong with adding a staple vanilla ice cream to just about any soda.
We used Prickly Pear, Grapefruit, and Lemon sparkling sodas that you can find at almost any grocery store. Combine that with some fun garnishes like cacti leaves, grilled grapefruit slices, and carved lemons, and you’ve got yourself quite the impressive cocktail that’s quick to make.
It probably goes without saying now that these didn’t last long at all at my house. They were totally gone by the time the last dish was picked up from these photos. We consider it a life skill, haha!

3 Sparkling Ice Cream Cocktails Recipe
- 1 1/2 oz vodka of your choice, for mocktails, omit vodka or replace this with soda water
- 2 scoop Häagen-Dazs® Vanilla ice cream
- 1/2 cup sparkling soda We used Blood Orange, Prickly Pear, and Lemon.
- Combine chilled sparkling soda and vodka in the glass, making sure to leave some room for your scoops of ice cream.
- Top with 2 scoops of Häagen-Dazs® vanilla ice cream.
- Serve immediately.
