How to Make White Pizza Sauce

Step 1 — Begin by measuring, preparing, and setting out all of your ingredients.

Step 2 — In a small saucepan, melt the butter over medium-low heat.

Step 3 — Add the minced garlic to the butter and saute it for a minute or two, or until it becomes fragrant. You don’t want it to become crispy or burned.

Step 4 — Slowly whisk the flour into the butter and garlic until you have a paste. Avoid adding the flour too quickly, as lumps can form.

Step 5 — Gradually add the whipping cream to the butter and flour paste. Continue whisking and mixing as you pour, until it’s all combined.

Pizza Crust Options

For the crusts, you can buy premade pizza dough from the refrigerated section at most grocery stores. Some local pizza restaurants will also sell their dough for you to use.

Or you can make your own!

How to Make a White Pizza

Step 1 —  To make the pizzas, preheat your oven to 450°F.

If you have a pizza or baking stone, place it in the oven before preheating.

Step 2 — Stretch each portion of pizza dough out into a 12” circle.

Step 3 — Use a rolling pin to do so or I prefer to use my hands to gently stretch it out. To do so, drape the dough over your knuckles and gently spread them to stretch the dough. And/or lay it on a sheet of lightly floured parchment to press it into a circle.

If you have trouble getting the pizza dough to stretch far enough without tearing or springing back, let it sit for 5-10 minutes. This rest period allows the gluten to relax.

Be sure to leave a cornicione (also called the crust) about an inch thick around the edge to hold on the sauce and toppings.

Step 4 — Spread half of the sauce over the center of each pizza.

Step 6 — Moving quickly, place the pizza in the hot oven. Avoid having the door open for a long as the oven will lose heat rapidly.

Step 7 — Bake the pizza for 10-12 minutes, or until the crust is golden brown and the cheese on top is brown and bubbly. You can also use a metal spatula to gently lift the pizza crust and make sure it is cooked underneath.

Step 8 — Remove it from the oven and allow it to rest for about 5 minutes.

Topping Ideas for White Pizzas

Here are a few ideas for what to put on your white pizza, but you can use your imagination and add whatever you want!

The flavor of white pizza sauce isn’t as strong as that red tomato sauce, so milder pizza toppings tend to compliment it better.

— Sliced or diced tomatoes

— Chopped roasted chicken

— Fresh basil: This should be added after cooking the pizza or in the last minute or two of baking time)

— Arugula (also added after baking)

— Diced artichoke hearts

— Sun-dried tomatoes

— Mixed greens & olive oil

— Dried oregano and basil

— Caramelized onions or shallots

— Bacon pieces

White Sauce Pizza Recipe Variations

— In place of milk, add an extra tablespoon of butter to the roux and use half-and-half or light cream.

— For a little freshness, squeeze some lemon juice in.

— If you prefer, you can add 1 teaspoon of mashed roasted garlic or minced sautéed garlic to the sauce instead of garlic powder.

— You can spice it up with a pinch or two of red pepper flakes.

Can I Make this White Pizza Sauce Dairy-free?

Yes, you can make a white pizza sauce dairy-free by substituting the milk (if any) for non-dairy milk, such as soy milk or almond milk. You may also need to add a bit more flour to thicken the sauce.

Many options are available at most grocery stores if you want a dairy-free cheese alternative.

How to Reheat Leftover Pizza

If you have leftover pizza, you may want to reheat it.

While a few seconds in the microwave will warm it up, it’s more effective to heat it in a hot skillet.

Place the leftover pizza in a warm skillet and put a lid over it. (Make sure its not too hot, or it will scorch the bottom of the crust)

The cheese on top will melt, and the crust will stay crisp.
