The apples are baked until tender and then filled with a rich and creamy cheesecake filling. The cheesecake is made with just a few simple ingredients. Once the cheesecake is set, the apples are topped with a whipped graham cracker topping and a drizzle of caramel.

Ingredients Needed
- Large crisp apples: For a sweeter apple, consider using Honeycrisp or Fuji apples. For a more tart flavor, Granny Smith apples are a great choice.
- Softened cream cheese: We used full fat cream cheese.
- Caramel sauce
- Vanilla extract
- Cinnamon
- Egg
- Graham crackers: If you don’t have graham crackers, you can use crushed cookies or nuts for the crust.
- Melted butter
How to Make Cheesecake Stuffed Apples
1 — Preheat your oven to 350°F (175°C).
2 — Wash and core the apples: Use a melon baller or a spoon to scoop out a cavity in the center of each apple, leaving a thick apple shell. Toss out the core, but reserve the remaining apple for the filling.
3 — Make filling: In a stand mixer, beat together cream cheese, caramel sauce, vanilla, egg and 1 teaspoon cinnamon until smooth and creamy.
4 — Add apple filling: Chop up the reserved apple and stir it into the cream cheese mixture.
5 — Fill apples: Spoon the filling into each apple, filling them to the top.
6 — Bake: Place apples in a greased baking dish. Bake for 30 minutes.
7 — Prepare graham cracker crust: In a small bowl, combine the graham cracker crumbs, melted butter and remaining cinnamon.
8 — Add topping: After the cheesecake baked apples have baked for 30 minutes, remove them from the oven. Sprinkle the graham cracker mixture on the apple tops.
9 –.Finish baking: Bake for another 20-30 minutes, or until set.
10 — Cool and serve: Let apples cool in the fridge for at least 2-3 hours. Serve with a drizzle of caramel sauce.
Recipe Notes and Tips
- Extra filling: If you have extra filling, pour it into a small ramekin and place it in the dish, surrounded by 1/2 inch of water, and then bake it alongside the apples.
- Caramel sauce: Feel free to adjust the amount of caramel sauce to your preference. You can also use homemade or store-bought caramel sauce. This recipe does not call for sugar since the caramel sauce is already very sweet.
- Baking time: The baking time may vary depending on the size of your apples. Check the apples after 25 minutes and bake for a few more minutes if needed.
- Serving: These stuffed apples can be served warm or cold. It is entirely up to personal preference. Some people enjoy the chilled creaminess, while others prefer the warm, comforting taste. Experiment to find your favorite!

Once they’re frozen, you can transfer them to an airtight container or freezer bag. They should stay fresh for up to 2 months this way.
- For short-term storage: Keep them in the refrigerator. Store in a covered container, lined with paper towels. They should stay fresh for 1-2 days this way.
