  • Whole grain oats: Old-fashioned (rolled) oats are the ideal choice for baked granola bars because because they hold their shape, provide a hearty chewy texture, and prevent the bars from becoming mushy.
  • Funfetti cake mix
  • White chocolate chips
  • Unsalted butter
  • Honey
  • Vanilla
  • Rainbow sprinkles: Use rainbow jimmies sprinkles. They hold their color best and won’t bleed like nonpareils.
  • Salt: Omit if you used salted butter

How to Make Funfetti Birthday Cake Granola Bars

Step 1 — Preheat the oven to 325°F.

Step 2 — Prepare the pan

Line an 8-inch square baking dish (or a 9-inch pan for slightly thinner bars) with parchment paper or foil and lightly coat with cooking spray. This will help the cake batter granola bars release easily after baking.

Step 3 — Melt the honey and butter

In a microwave-safe large bowl, combine the honey and butter. Microwave for 30 seconds, then stir well. Continue heating in 15–30 second intervals until the butter is fully melted and the mixture is smooth.

Step 4 — Mix the granola bar batter

Add the oats, funfetti cake mix, vanilla extract, and salt to the melted honey mixture. Stir until everything is evenly combined and the oats are fully coated. Then, gently fold in additional rainbow sprinkles.

Step 5 — Press the mixture into the pan

Transfer the mixture into the prepared baking dish. Using clean hands or the back of a spatula, press the mixture down firmly and evenly. This step helps the granola hold together once baked.

Step 6 — Bake the granola bars

Bake the pan for 18–20 minutes, or until the edges turn light golden brown. Remove from the oven and allow the granola bars to cool completely. For faster cooling, you can place the pan in the refrigerator.

Step 7 — Slice the birthday cake granola bars

Once the bars are fully cooled and set, lift them out of the pan using the parchment paper. Slice into bars about 1 to 1½ inches wide.

Step 8 — Drizzle with white chocolate

Melt the white chocolate chips until smooth. For an easy drizzle, place the chocolate chips in a small zip-top bag and microwave for 30–45 seconds, or until melted. Cut a tiny corner off the bag and drizzle the melted white chocolate over the birthday cake granola bars.

  • Gluten-free: While pure oats are naturally gluten-free, there is a chance of cross-contamination during farming and processing. So while safe for most with celiac disease, we recommend for shopping for oats with a certified gluten-free label. Bob Red Mills is a great option.
