As temps soar and pool days stretch long into golden evenings, there’s one thing that keeps making a splash: frozen cocktails. Last month, I was all about fruity refreshment with these strawberry raspberry coconut daiquiris that we created. (They disappeared fast). But lately? We’ve been craving something a little richer… a little more indulgent… something chocolatey.

That got us thinking about the famous frozen hot chocolate, the kind people used to line up for in NYC like it was a golden ticket (before the cronut stole its spotlight, of course). Funny enough, I, Ashley, realized I’ve never actually had one! So, naturally, I set out to create my own version. And because I love a good grown-up twist, mine comes with a boozy kick.

Ingredients Needed

Most recipes for hot chocolate rely on cocoa powder or pre-made hot chocolate packets. They tend to be thin, overly sweet, and seriously lacking in rich, true chocolate flavor. So skip the hot chocolate mix!This version is the real deal. This homemade version brings real chocolate flavor and texture. A blend of semi-sweet and dark chocolate gives it a deep, velvety richness without being overwhelmingly sweet.

  • Ice — For that perfect frozen texture
  • Whole milk and cold heavy cream For richness
  • Bourbon Adds a warm, smoky undertone that pairs perfectly with chocolate.
  • Semi sweet chocolate and dark chocolate For deep cocoa flavor. Use a mix of  chopped semi-sweet and dark chocolate bars (not chips) for the best melt and depth of flavor. Brands like Ghirardelli or Valrhona work beautifully.
  • Sugar
  • Salt — To balance the sweetness. Pinches of salt might seem small, but it enhances the chocolate and balances the sweetness. It’s the little touch that makes a big difference.
  • Optional: Whipped cream and marshmallows on a skewer — For garnish. We used gourmet marshmallows from Craftsman & Wolves. There are also some fun rainbow twist marshmallows and color changing marshmallow options online.

How to Make Boozy Frozen Hot Chocolate Cocktail

1 — In a saucepan, heat milk over medium heat until warm (not boiling), whisking constantly.

2 — Remove from heat and whisk in chopped dark and semi‑sweet chocolate until melted.

3 — Stir in bourbon, sugar, and salt.

4 — Add cold heavy cream to cool the mixture. Chill in the fridge if needed.

5 — Blend the chocolate mixture with ice until smooth and slushy.

6 — Pour into tall glasses. Optional: Garnish with whipped cream and a skewer of marshmallows.

Recipe Notes and Tips

  • Serve Immediately: This is a frozen drink, so it’s best served fresh. If you’re prepping for a party, make the chocolate base in advance and blend with ice just before serving.
  • Alcohol swaps: Use chocolate liqueur, Kahlúa, or even peppermint vodka for a minty twist.
  • Make non-alcoholic: Swap bourbon for chocolate syrup or omit entirely.

  • 4 oz semi-sweet chocolate
  • 4 oz dark chocolate
  • 3 tbsp white granulated sugar
  • 3 pinch salt

Instructions

  • Heat milk in a saucepan over medium heat, whisking constantly until warm but not boiling.
  • Take off the heat and whisk in the dark and semi sweet chocolates. Once the chocolate has melted, whisk in the bourbon, sugar and salt.
  • Whisk in the cold cream to cool the mixture. If the mixture is still too warm, let it cool in the fridge for a bit.
  • Add the chocolate mixture into a blender with ice. Blend until the ice has fully incorporated.
  • Pour into large glasses. Top each glass with whipped cream and garnish with a skewer of marshmallows.
