Ingredients and Tools to Make Colorful Alcohol Lollipops

Hard liquor — We used half clear rum and half tequila.

Water

Sugar

Corn syrup

Flavoring — Optional: We used peppermint.

Food coloring of your choice — Optional

Silicone mats — You can use lollipop molds. However, we love the imperfect and unique shapes when simply pouring the mix onto a mat.

How To Make Homemade Alcohol Lollipops

1 — Lay down silicone mats to use to pour the lollipops once they’re ready.

2 — In a sauce pan over medium heat, stir in the water, sugar, and corn syrup until well combined.

Then, let the mixture come to a boil without stirring it at all. Continue testing with a candy thermometer until it reaches 320 F degrees.

3 — Once it’s reached 320 degrees, add in the liquor, give it a very quick stir to mix, and then, let it reach 310 F degrees again.

4 — Remove from heat and spoon onto the silicone mat, while quickly making a swirl or two with food coloring dipped on the end of the lollipop stick, then lay the stick in place to cool.

(You want to heat the liquor as little as possible so it doesn’t boil out all of the alcohol.)

The mixture should be solid within 10-20 minutes. If it doesn’t completely harden, it didn’t reach hard crack phase, so you will need to adjust to cook it longer.

How to Make Easy Melted Jolly Rancher Alcohol Lollipops 

If you’re going for the easy Jolly Rancher version —

Ingredients needed:

1 1/2 cups of unmelted Jolly Ranchers

1/4 cup of hard liquor

How to make a quick version of the alcohol lollipops:

1 — Unwrap the Jolly Ranchers, and place them in a pan on low/medium heat.

2 — Boil to 290 F.

3 — Remove from the heat immediately and add in the liquor. Let melted Jolly Ranchers warm back to 290-300 F.

4 — Quickly pour them onto the silicone mats, and insert the lollipop sticks.

5 — Allow the alcohol lollipops to cool for 10-20 minutes, and then you’re all set.

Recipe Notes and Tips on How to Achieve the Marbled Lollipop Look

— If your lollipops are too soft, they weren’t cooked long enough.

— If they’re cloudy or brown, they were cooked too long.

— Be VERY quick when adding in your food color and lollipop sticks. Therefore, don’t double the batch because you won’t have enough time to make all of them anyways.

  1. I’m sorry if someone already asked and you answered, but does the alcohol cook out this way? If not all the way, how strong would the suckers be using your recipe for standard rum? If we add more alcohol, will we need to adjust the other ingredients? Or simply add more? Sorry, and thank you in advance.

    • Hi Dee! Great question. The rule of thumb when heating alcohol is that the alcohol content decreases by 10% after every 30 minute intervals of cooking. We are not cooking down the alcohol is this recipe. If you want to add more alcohol, you do need to adjust the other ingredients. If you don’t it will effect the consistency. Hope this helps!

    • Hi Brenda! We haven’t ran into any burning issues nor have anyone who has tried the recipe so sorry to hear! They definitely should not come out burn and burnt tasting… that definitely means that they’ve overheated. Are you heating them to 290-degrees Fahrenheit?

  4. The batch came out good, can’t really taste the alcohol. It also cooled much faster than I anticipated and I couldn’t get the coloring and sticks done in time. Overall was easy to make you just can’t be slow to pour onto the mats.
